Just remember, without quest markers, you need more explicit instructions on where they need to go and what they are looking for. Dialog in Morrowind really helped and made you listen and take notes. And the NPC would usually repeat themselves if you forgot what you were supposed to do. (Or you can put that in the journal.)

Quests markers are easy to avoid in Oblivion and Skyrim: simply do not make any quest active. This won't prevent the quests to work and advance when you do stuff.

Otherwise, Morrowind has deeper content in terms of lore and politics; probably too much, few was left for the other games! :P
